Sajji

Sajji being cooked in Balochistan, Pakistan. Sajji is a popular dish in Balochistan province of Pakistan. It consists of whole lamb, in skewers (fat and meat intact), marinated only in salt, sometimes covered with green papaya paste, stuffed with rice, then roasted over coals.





BALOCHI MUTTON SAJJI RECIPE

INGREDIENTS:

  1. Leg of lamb – 1 ½ kg
  2. Lemon juice – ¼ cup
  3. White vinegar – ¾ cup
  4. Ginger garlic paste – 3 tbsp
  5. Meat tenderizer or kachri powder – 1 tbsp
  6. Lemon slices and chat masala – as required

METHOD:

  • Wash and clean the leg of lamb, prick with fork.
  • Then soak in water for 1 hour.
  • Then in same water, add ¼ cup lemon juice, vinegar, ginger garlic, salt and meat tenderizer, mix well.
  • Then soak leg in this water for 1 hour.
  • Then bake in preheated oven on 150º C for an hour.
  • Then serve with chaat masala and lemon slices.
